This is a lovely and lightly refreshing salad. The lemon in the dressing works well to keep the apples from browning, so I make sure to whisk the dressing before chopping the apples so I have it at the ready.
Ingredients:
1 clove garlic, minced1 tsp dried organic basil
1 tsp Dijon mustard
2 tsp dried organic parsley
2 tbsp olive oil
1/4 cup lemon juice
2 C peeled and chopped apples, about 1/4" pieces
2 C thinly (as thin as your patience) sliced celery
